My healthcare insurance company sends out a newsletter four times a year and as I was looking through it, I found this recipe that sounded so good. And because I love angel food cake and pumpkin - I knew this would be delicious!
Pumpkin Angel Food Cake
1 cup canned pumpkin
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground cloves
1/8 tsp ginger
1 16 oz one step angel food cake mix
In large bowl, combing the pumpkin, vanilla & spices. Set aside. In another bowl, prepare the cake mix as directed. Fold 1/4 of the batter into the pumpkin mixture. Gently fold in the remaining batter. Spoon into a ungreased 10-inch tube pan. Cut through the batter with a knife to remove air pockets. Bake on the lowest oven rack at 350 degrees for 38-44 minutes or until the top is golden brown and the cake springs back when lightly touched. Immediately invert pan onto a wire rack. Cool completely, about 1 hour. Run a knife around the sides of the cake and remove to a serving plate. Garnish each slice with whipped topping and sprinkle with cinnamon if desired.
