White Chocolate Cranberry Cookies

I found this recipe in Gooseberry Patch Favorite Recipes and the combination of cranberries and white chocolate intrigued me. And I must tell you that this is my new favorite cookie. The only two ingredients you'll probably need to buy in order to make this recipe is white chocolate chips and dried cranberries.


White Chocolate-Cranberry Cookies

1/2 cup butter, softened
3/4 cup sugar
1/2 cup brown sugar, packed
1 egg
1 t. vanilla
1 3/4 cup flour
1 t. baking powder
1/2 t. baking soda
1 cup sweetened dried cranberries
1/2 cup white chocolate chips

Beat butter in a large bowl at medium speed until creamy. Gradually add sugars, beating until combined.
Add egg and vanilla, beat until smooth. Combine flour, baking powder and baking soda, gradually add to sugar mixture, beating well. Stir into cranberries and chocolate chips.Shape dough into 1 1/2 inch balls; place 2 inches apart on ungreased baking sheet. Bake at 375 degrees for 14 minutes or until golden. Remove to wire racks to cool. Makes about 2 dozen.
