Here's one of my family's favorite casseroles when the weather turns cold.
Hot Chicken Salad
4 cups chicken breasts
2 cans cream of chicken soup
2 cups chopped celery
1 cup plain slivered almonds
1 tsp. salt
1 tsp. pepper
1 cup mayonnaise
2 cans water chestnuts
1 1/2 cups grated cheddar cheese
2 cups potato chips
Cook chicken in salt water until done, and chop into bite-sized pieces. Combine all ingredients except potato chips in a large casserole dish. Crumble potato chips or chow mein noodles and sprinkle on top. Bake at 350 degrees until hot and bubbly, about 45 minutes. Serves 6-8.

One of my favorite recipes is chicken with cream of mushroom soup, with beef and bacon. Yours sounds delicious. Will have to give it a try. Thanks for sharing.

Hi, Terry, Oh, I've had this one before & it is wonderful. Good chick food too, great for a brunch or girl's party. I don't think my hubby would like it, but I do.
And Terry, you are cracking me up this a.m.! Boars Head is a deli brand of meats. We have them at our local Publix and to me, they are the BEST deli meats around. They have pancetta & I only got 1/4 lb (it's about $11 or 12 a lb.) and it is so flavorful that it was plenty for this dish. I added in my mom's quart jar of tomatoes. The pancetta & onions together are amazing.
